The first one is Noto rice, Junmai sake brewed by Yoshida Shuzo. The taste is so robust that it is hard to believe it is low-alcohol.
Tomorrow is Morioka. Not really, but here it is. This is a duo brewed by Noto's Kazuma Shuzo and Iwate's Akabu Shuzo. The brewers seem to know each other and went to Iwate to brew together.
The sake rice is Yumemizuho, a relatively affordable rice for rice in Ishikawa Prefecture.
It was shockingly delicious. It was sweet and had a beautiful acidity. Mr. Akatake is amazing. You make the most of the characteristics of the ingredients.
What should I drink in Morioka?
The sweetness and umami of the rice with a hint of other umami. This "zoshi-yami" emphasizes the complex umami (🤤).
The rice polishing ratio is 55%, but I thought it was higher.
The finish is caramel. After a while, apples (🍎) appear.

I was curious about Okazaki Shuzo's Gohyakumangoku sake, so I bought it 💰.
This sake is a collaboration of rice from the Kazuma Sake Brewery and sake made by the Okazaki Sake Brewery.

I can't judge Takeba because I haven't had it yet, but I can feel the Shinshu Kamerei-like flavor: ☺️
Light mouthfeel and juicy fruity taste😊and a slight bitterness in the aftertaste.
I think it's a bit like Hitogokochi, which is a bit sweeter than Shinshu Kamerei. I'm not sure if I remember it right, but whatever it is, it's delicious 😋.
I wonder if I would have had a different impression if I had also had Takeba? Next time, I would like to try Takeba by Kazuma Shuzo...

The Kazuma Sake Brewery brews with rice from Noto that is equivalent to six times the size of the Tokyo Dome. The rice that could not be brewed due to the Noto Peninsula earthquake was consigned to sake breweries across Japan, not to mention local breweries.
