Somewhat bitter and bluish as well.
Aroma like mellow, aromatic, apricot liquor.
The flavor has body.
In the latter half, the acidity is very tight.
It has a firm umami taste.
It goes well with pickled bonito, but I would like to try it with something sweeter.
I would like to try it with shigure-ni-nimono (simmered bonito).
