This is the first time I bought a bottle of Kojiya.
The first sip after opening the bottle.
The fluty flavor fills the mouth and is delicious.
The taste shifts from sweetness to spiciness to bitterness. It is rich, but still firm.
The rice is Yume Issho and Yamadanishiki.
It was drunk over several days, but the impression was that it was a blamed sake that insisted on all the aroma, sweetness, umami, spiciness, and bitterness.
Kojiya is the brand of the brewery that produces Fukuoka's Shigemasu. Kojiya is a more assertive sake than Shigemasu.
The name "Kojiya" comes from the fact that when Takahashi Shoten was founded 300 years ago, it was called "Kojiya" because it brewed soy sauce and miso.
After being hospitalized for dissection of an artery in my intestine, I was finally allowed to eat things by mouth (^_^)/.
