🍁Mikurabe 🍁 in autumn at Mukho Brewery.
(2) Buko-Masamune Hiyahi Oroshi Tokubetsu Junmai Genshu (Hiyahi Oroshi)
The "Haiku" is the name of a sake brewery in Japan!
The sake is a pure rice sake with a nice, standard taste that does not betray expectations.
The Chichibu Night Festival is already in full swing in Chichibu,
It's too late to feel the autumnal atmosphere, but I'm glad I had it.
I'm glad I had a chance to try it.
I only drink "Chichibu Nishiki" as Chichibu's local sake in Sakegawa, but of course I also love "Bukou Masamune".
So tonight's theme is
"Mukou Shuzo's Autumn Mimamiawase" (🍁Mukou Sake Brewery's Autumn Mimamiawase🍁)
Muko-Masamune Autumn Age Honjozo
It is dry and sharp.
It doesn't interfere with food, but it has presence...
Such an excellent child.
I have bought and tried many Chichibu sake, but I like this Buko-Masamune the best.
While other Chichibu sakes have a somewhat dry, ricey smell, this Buko-Masamune is clean, dry, and slightly fruity. It is easy to drink and has no peculiarities. In other words, it is about the same quality as a proper sake that is commonly consumed.
One cup I stocked up on while climbing Mt. Thanks to Mt. Mukou, the hero of Chichibu, which has been sending cement (limestone) since the Meiji era for the development of Japanese industry...and has been completely transformed!
One cup of Bukko-Masamune that I bought at Maruhiro Department Store in Kawagoe.
It has a refreshing taste with a beautiful umami flavor.
Buko-Masamune is a good sake.
The main dish for dinner was steak.
I bought the meat at the basement of Atre near Kawagoe Station.
It was grilled simply with salt and pepper.
I put a little of FUEKI soy sauce, which I hadn't bought for a long time, on it.
You can choose your own alcohol
There are 5 kinds of sake.
I chose the unfiltered sake!
The waiter told me that this was the most popular sake, so my expectations were high!
A little spicy!
But it goes well with creative French dishes!
The sauce of the river fish is oiler, so it goes well with the dry and crispy sake!
I thought Saitama's sake is mostly fruity, which is popular these days, but Chichibu's sake is a traditional and authentic sake!
We have high expectations for the next local sake, Chichibu Nishiki!

My daughter's work has settled down and she has some time off for a late summer vacation.
My daughter's work was finished and we had a late summer vacation, so my wife and I took a relaxing one-night trip.
First time in Chichibu!
We found a nice inn 🏨.
There is a sake brewery nearby!
Let's check it out tomorrow!
Three different kinds of sake that came with dinner!
Two of them were already chosen, but the other one had a choice of 5 different types!
I heard that Chichibu's sake is mostly dry and robust!
This Daiginjo was probably the easiest to drink for me!
We had a lot of fun talking about all sorts of things and the sake went down fast!

Review of the Collection 62
This is another bottle that I bought at the Mukou Sake Brewery during a one-day trip to Chichibu. This is the one I personally liked the most at that time among the ones I was able to taste!
The words "light and refreshing sake," "refreshing cold sake," and "slightly dry and smooth," say a lot in a few words.
The aroma is quite light! It only has a faint aroma of grass and grains. I like it this way.
The aroma is very "so-called sake," and although Bukko-Masamune itself is a dry sake brewery that makes its sake with hard water, this "so-called" feeling may come from the image of the name, lol.
However, what is interesting is that it is as smooth and easy to drink as the description says.
From the moment you drink it, a moderate amount of acidity comes out and stays until the end. The sweetness, which may be due to the alcohol or the sake itself, is gently apparent until the middle part of the bottle. The spiciness finishes off with a spiciness. It is a good dry sake with just the right amount of umami.
Sawanoi is also good at this kind of sake. It could be described as an old man's sake, but the acidity is more in line with modern meals. This is good!
Review 61 of the warehouse
This GW I decided to visit Chichibu City in Saitama Prefecture. This is because the Seibu Line was holding a stamp rally for sake breweries along the Seibu Line.
Visiting the brewery, I enjoyed the quaint building, friendly shopkeepers, and fun drink comparison tasting zone. You can also drink the spring water behind the building, which is rich in minerals. They say that the taste is dry because it is made with this water.
I bought this cloudy sake after being told that "our nigori is easy to drink.
In fact, it is very easy to drink! It is not sweet, but the nigori flavor adds to the flavor, making it very mild on the palate. Combined with the 14% alcohol content, it was easy to drink.
There is no acidity and no fruity aroma. There is no acidity, no fruity notes, and if anything, no fizz at all. There is nothing modern about it, but it's amazing that such a rugged sake can be drunk so smoothly and settle in the stomach one after another.
I drank it with Chinese stir-fry, but I think it would go even better with something a little darker....I'm sure it would be delicious with mapo tofu!
To be honest, I finished it before I could write my thoughts.
I want to drink it again, so I'm going to buy some more!
Visited the warehouse for the sake seal.
Yanagida Sohonten, the brewer of Muko-Masamune, named after Chichibu's famous Mt.
The current building was constructed by Kamekichi VIII over a period of several years as a sake brewery, grain storehouse, and dry storehouse, and the store is said to be the oldest remaining structure in the Chichibu valley today. Sake brewing always requires good quality water, and in search of better brewing water, the store was relocated several times before it was established here.
As known from the Chichibu folk tale of the "Seven Wells," we are located in the water system of a famous well that never runs dry no matter what the weather is like, and is of excellent quality and quantity.
Buko-Masamune has been nurtured by tradition and the secret skills of our master brewers, and over the years has been honored with numerous awards at various sake fairs and competitions, and is known for the quality of its sake. We will continue to strive to make "Buko-Masamune" as a small brewery's handmade sake.
