When I was in Kiso in the summer, I passed by the Yukawa Sake Brewery of Kuroemon XVI, but I didn't go there because I read online that you can't buy it at the brewery. (So I didn't drink it.)
I found it at a liquor store the other day and got it! (I'm in Tokyo though)

I feel the acidity first!
Also, it's a bit like Yamahai, isn't it?
Relatively firm taste with a focus on acidity.
On the second day, it gradually becomes more sweet and delicious.
The acidity settles down.
I think I can taste the rice flavor.
I prefer it this way.
I read that it is recommended to be served lukewarm, but it's still hot, so I served it cold and tried my best to serve it at room temperature.
The back of the bottle says "Oh, fruitful autumn sounds wonderful", but maybe I should have drank it when it was a little more like autumn, it was like summer yesterday too: ☀️☀️

Transparent with a slight yellowish tinge. The aroma is sweet and full, with hints of banana, candy candy, cereal grains, and custard cream. The intensity of the aroma is medium. Smooth and pleasant on the palate. A refreshing hint of citrus appears soon after. The 13% alcohol content gives it a light mouthfeel. It has a medium aftertaste with just the right amount of astringency. A mellow sake.

Kiso-gun, Nagano Prefecture Yugawa Shuzo Brewery Jugendai Kuroemon Junmai Ginjo Hitogokochi Unadulterated Nama Sake 100% Hitogokochi from Nagano Prefecture
The taste is strong acidity and a little bit sweetness.
It is quite thick and robust, with umami, sweetness, and a slight acidity. It is a quintessential unfiltered raw sake.
It may be a little heavy for those who like a refreshing water type sake.
The label on the back says "Oh, Delicious apple! on the back label, but it is more like an apple pie with lots of butter than a fresh apple. It's just an image, not a taste, so please don't misunderstand me.
It tastes and tastes like a dessert wine, and I think it has a strong personality to be used as a food wine.
I'm going to work 4 days in a row from tomorrow, and I'm going to do my best while everyone is celebrating the holidays....

The aroma is right between rice and fruit, and the taste is very elegant. It is a beautiful sake with apple-like acidity and a hint of sweetness, yet it disappears nicely. It is certainly good in a wine glass.
