Finally posting for this year. LOL!
This was my first drink of the new year!
It was sharp and clean as described, but you could still taste the deliciousness of Shirakiku, and the balance with the acidity was perfect!
Whenever I go home to my parents' house, I always buy sake that I like, so I end up buying only sweet sake that is more modern, which has not been very popular with my family, who prefer dry sake, but this sake was highly praised by my father, so it was worth it!

And it's unfiltered unpasteurized sake.
The sweetness of the alcohol complimented the dryness of the sake.
As expected, it was delicious!
Is this the first sake from Kyoto? It has a slightly fizzy and sweet taste on the palate, but the spicy and alcoholic aftertaste makes it my least favorite sake.
The next sake I had was "Ginshari Special Junmai Sake" from Shirasugi Shuzo, a sake brewery located in the Tango area of Kyoto.
The first glass of this sake had a strong gaseous taste, and it might have been as gaseous as MATCH, a slightly carbonated beverage!
In the mouth, it has an impactful rice flavor and freshness, followed by a dryness like a slight bitterness that passes through the nose.
Both the taste and the gaseous sensation are strong, so it seems to go well with strong dishes.

The sweetness is moderate and refreshing.
It goes well with Japanese, Western, and Chinese meals.
Pear and melon-like aroma. Slightly gassy. Fruity, but not sweet and moderately spicy. Slowly developing a delicious flavor. Freshness comes later. Delicious.
It was my first drink, so I thought it was too spicy at first sip. But as I drank it, I found it to be mild and I could taste the flavor of the rice, which I quite liked!

Kyoto's Ginshari. I found it by chance at a souvenir store in Kyoto station. It's a top-shelf version of Kaze no Mori for me, with a sweet-sweet taste that starts out as a shwashuwa and finishes with just the right amount of sake. The fact that it doesn't deteriorate that much even after a few days is also appealing. It's one of the four heavenly kings of cosmetics. 4.4
