Yesterday it was snowing and it was ❄️ cold, so we had it warmed up.
My wife said she didn't like it when it was cold because it was too much like sake.
It tastes better when heated up.

Mmmm. Rich mellow ^ ^ Umami condensed ❗️
Perfect balance of sweet and sour 😉.
I had it with furofuki daikon (Japanese radish) 🥕.
With a little sweet dengaku miso and daikon radish with soup stock ^ ^.
I wonder if it would go well with pickles too ☺️

The second brewery on our tour of the five Suwa sake breweries was Reijin. We could have chosen beer for the tasting, but since we were there, we decided to try four kinds of sake.
We had the junmai and junmai ginjo from the first shibori, both of which were fresh, wild, and energetic.
In that sense, they are sakes that can only be drunk now.
The autumn-aged sake is the most striking. It has become completely calm and round.

Reijin Hatsushibori-Junmai Ginjo-Ginjo-Hara-Shu
This brewery is located in Suwa City, Nagano Prefecture.
It is a new sake of 27BY.
The fresh and fruity aroma of freshly squeezed sake
The aroma is fresh and fruity, and the taste is rich and mellow.
It is slightly high in alcohol at 17%, so be careful not to drink too much!

We visited the "Shinshu Sake Museum Yurakuan" at Yokoya Onsen in Chino City! The specialty of this place is a collection of sake labels from all the sake breweries in Nagano Prefecture! (Since it is not possible to have all the brands due to the specifications, we chose Reijin-sama, a large bottle of sake representing the Suwa area.)
Tsubu-chan, since you have just opened and have been learning a lot and aspiring to further improve its attractiveness, this is a great recommendation!

So tonight, if it's Kiri number, this is the only way to go!

The label says "dry extreme", so it is very dry.
But it is surprisingly smooth on the palate with a hint of sweetness.
It has a strong alcohol taste, but it also has a strong umami taste, and I was able to enjoy "the sake" for the first time in a long time 😋😋.

The brewery is located in Suwa City, Nagano Prefecture.
The rice is polished to 59% Nagano rice.
Fruity aroma, soft rice flavor
The fruity aroma, soft rice flavor, and refreshing acidity are well balanced with a crisp finish.

Seasonal fresh storage. Banana-type aroma.
It has a sweetness and mildness with the angularity of fresh storage.

It is a delicious sake with a good balance of sweetness and sourness. A little astringency at the end is a nice touch.
Suwa Gozo Spoils of War
This is a not-for-sale item that you can get if you don't taste it at Reijin.
The aroma is classic, with little sweetness and a refreshing taste.
It has evolved into one cup.
It is a little thin but not sticky.
I enjoyed it with soaked mushrooms, okra, carrots, komatsuna, and other vegetables.
It was gone after the appetizer and pickled radish.
