I had a chance to taste it and it was amazing! I had never seen rice polished to 25% before. It was amazing how clean it was and had the most delicious sweetness and flavor of the rice without any of the cloying taste. The best sake I have ever had in my life.

Today is the first day of work. I had some "shimotsukare" (a type of fish cake) with snacks that I bought in Tochigi, where I visited to greet my clients. I served it cold at first. It was fluffy with a clean finish. Next, I warmed it up. The umami flavor spreads quickly and goes well with any meal.

Sake rice: Koshitanrei (50% polished rice) Sake rice developed by Niigata Prefecture over 15 years (a cross between Yamadanishiki and Gohyakumangoku) ☆Snow chamber storage SEVEN is a brand created to commemorate the 7th generation of the brewer and toji. Fruity 🍓. No clingy sweetness that Junmai Daiginjo tends to have. Yet, it is not too watery or too refreshing, and the flavor and aroma are well defined by the "sake" taste! As one would expect from Shirotaki! It tastes better when it's lukewarm!

Junmai-shu: Nama-hashigashi-zukuri⭐️⭐️⭐️⭐️ Polishing ratio 60%, ALC 16-17 degrees 20241112-1114This is the third type of sake purchased on a trip to Kaigake Onsen and Muikamachi Onsen in Niigata 🤗. I was told that it is good warmed sake... so I had it lukewarm to top-heat. It is a refreshing sake that you never get tired of drinking, yet you can feel the sharpness and the umami of the rice. Bought it when I heard it was dry. Just from the opening of the bottle, a sweet aroma spreads, and when you drink it, you feel sweetness and a strong flavor. The aftertaste is mildly dry. As time goes by, the aroma of alcohol becomes stronger and drier. In general, it has a strong umami flavor that is enjoyable. A luxurious bottle!

Another brand of Jozen Josui. The packaging is SDGs-esque with bags made of rice bran. 🌏️ The SEVEN series are all Koshi-tanrei, apparently. It seems that almost none of them are available outside of Niigata Prefecture yet. It's fire-brewed but fresh and gassy. It has a dry atmosphere, but has a moderate sweetness. A little peachy. A touch of bitterness towards the end. Easy to drink, dry and light, with a sense of goodness. Junmai Ginjo is about 2,700 yen, so it's a bit expensive 💦. The packaging and the red sticker on the Japanese paper-like label is specially processed and looks like a lot of work 🤔.

☀️ The 8th SAKE Fes in Yurakucho. This brewery is famous for KAMIZEN Nyosui. They say it is a new brand and the amount of stones they can produce is still small. I recklessly asked them to sell it through the sales channel of Kamizen 🤣. Here is the sake 🍶. Gentle and thin sweetness. Rich in ginjo aroma and supple on the throat. Overall a graceful finish 😚. This sake🍶 is a must check✅. ❗️
