20241112-1114This is the third type of sake purchased on a trip to Kaigake Onsen and Muikamachi Onsen in Niigata 🤗.
I was told that it is good warmed sake... so I had it lukewarm to top-heat.
It is a refreshing sake that you never get tired of drinking, yet you can feel the sharpness and the umami of the rice.

Shirataki’s Jozen Junmai Ginjo sake, brewed in Niigata Prefecture, has a distinctive light and dry profile, characteristic of the region. It offers a soft, smooth flavor with fruity notes such as apple, pear, and banana. Its delicate aroma and mineral undertones make it a balanced choice for pairing with sushi, sashimi, seafood, or fresh fruits.
Bought it when I heard it was dry.
Just from the opening of the bottle, a sweet aroma spreads, and when you drink it, you feel sweetness and a strong flavor. The aftertaste is mildly dry.
As time goes by, the aroma of alcohol becomes stronger and drier.
In general, it has a strong umami flavor that is enjoyable. A luxurious bottle!
Another brand of Jozen Josui.
The packaging is SDGs-esque with bags made of rice bran. 🌏️
The SEVEN series are all Koshi-tanrei, apparently.
It seems that almost none of them are available outside of Niigata Prefecture yet. It's fire-brewed but fresh and gassy. It has a dry atmosphere, but has a moderate sweetness. A little peachy. A touch of bitterness towards the end.
Easy to drink, dry and light, with a sense of goodness.
Junmai Ginjo is about 2,700 yen, so it's a bit expensive 💦.
The packaging and the red sticker on the Japanese paper-like label is specially processed and looks like a lot of work 🤔.

This brewery is famous for KAMIZEN Nyosui. They say it is a new brand and the amount of stones they can produce is still small.
I recklessly asked them to sell it through the sales channel of Kamizen 🤣.

Gentle and thin sweetness.
Rich in ginjo aroma and supple on the throat.
Overall a graceful finish 😚.

The wine has a clear water color and a strong fruity aroma.
The mouthfeel is as clear as the water color, and the fruity aroma escapes through the nose.
The rich grain and pear-like flavor that overflows with the aroma, and the heavy lingering taste and bitterness that lingers on the tongue.
This is a gorgeous bottle with a wonderful balance of appearance, taste, and thickness.
When drunk on its own, the acidity is stronger than the sweetness. When drunk on the rocks, the acidity is diluted and it becomes easier to drink.
It is a good sake to drink in the summer.
