From last week's Sushi Matsuura, I would like to introduce some sake that I have never had before. First, Yamashiroya.
A brand I had never heard of. It is a sake from Nagaoka. As the concept of this sake is to accompany a meal, the sake itself is not so assertive and complements the meal. But it is also delicious on its own. It is my favorite type of sake these days.
I am going to Niigata next month, so I have a lot to look forward to. I'm sure there will be a lot of unknown delicious sake!
Canned peaches, nectar-like aroma, mild.
Soft texture on the palate.
Creamy sweetness, mild flavor.
Sourness alternates with sweetness.
The second half of the bottle is bitter, and it ends quickly.
I paired it with cumin confit gizzards,
It is surprisingly good with a meal as well.

It is a refreshing and refreshing sake with a moderate sweetness.
Like a sparkling wine, it is easy to drink with a meal.
The aroma is fruity without being showy.
It has a smooth, silky mouthfeel that spreads easily and seems to have no peculiarities, but the umami, subtle sweetness, acidity, and light bitterness in the aftertaste are all nicely integrated.
It is a good sake that is easy to drink but has a complex flavor.
