I had an image of a traditional sake, but this is a very DRY junmai made with Yamadanishiki from Hyogo Prefecture and brewed by a Chichibu-raised brewer......................umami and a nice bitter aftertaste that gives it a sharp edge! It's good as a food sake.....................................................I guess there are different tastes. ....
I thought it would go well with strong-flavored hormone and pork marinated in miso, but... it had a fresh fruity aroma and a light dry taste that I didn't expect. I wanted to enjoy it the next day, too... but when I drank it with my son and daughter... we realized it was empty (laugh).
