Firstly the bottle is really of high quality and beautiful. I can’t resist keeping the bottle at home! Being frank, the smell surprises me - it is rich of umami, mushroom and soy sauce. Also lactic acid smell like fresh and mozzarella cheese. However when I actually drink it, it tastes much lighter than I thought. There is a bit of cooked rice sweetness, cheese and yogurt sourness and the umami comes at the end. Significant and easy to recognise. Nice Niigata style.
