The sake rice is Hitomebore, a rice produced in Miyagi Prefecture, which is also unusual. How does it taste?
It is mild and has a moderate sweetness. The rice flavor can be felt at the back of the bottle. It is refreshing, but the dryness and bitterness linger on the palate.
It is not flashy, but has a calm taste and can be drunk at ease. Because of its delicate taste, it was a slight mismatch with today's samgyeopsal.

This sake has a robust flavor and is slightly dry, but also has a mild sweetness.
The design of the 2022 bottle is very nice. The uneven design at the bottom of the label was the family crest of Katsuyama Shuzo, the Date family's official brewer.
