I went back to my hometown for the first time in about 3 years, so I opened a bottle of Junmai Ginjo from the only local sake brewery, Kinsho 🎉.

There is almost no standing aroma, but as soon as you take a sip, sweet, spicy, and bitter flavors gradually come together, and before you know it, your mouth is overflowing with umami.
It is quite easy to drink due to its moderate alcohol content (15%).
This time we served it at room temperature, but it would be delicious even slightly heated.
It was a beautifully delicious sake with a strong taste of rice flavor 😊.
I won this sake in a contest held in Fukushima Prefecture. I enjoyed it on New Year's Day as an accompaniment to my New Year's Day festive meal. Sake from places where the rice is good is delicious. Unfortunately, I was so drunk that I don't remember the details of the taste.

However, compared to today's sweet and sour sake, the sweetness may seem milder.
