First up was our first Rihachi no. 901.
It is a junmai ginjo sake brewed with Kyokai no. 901 yeast, a foamless strain of yeast no. 9 isolated from Koro in Kumamoto.
The Tabe Takeshita Brewery in Shimane Prefecture is a sake brewery connected to the family of Prime Minister Takeshita.
Apparently, Prime Minister Takeshita's family is a branch of the family, and I heard an urban legend that when he asked Daigo (from Wish) to be the brewer, he was turned down, but it has nothing to do with the taste of the sake😁.
The appearance is clear crystal.
The aroma is mild, with a hint of fruity aroma hidden in the elegant aroma of koji, typical of sake.
The texture is slightly thick, and the attack is typical of sake, with sweetness and umami accompanied by a light stimulation.
From there, a gentle stimulation of acidity caresses the top of the throat and leads to the back of the bottle, where the fragrance is more fruity than the upper aroma and finishes with a touch of astringency.
The more you drink, the sweeter and more fruity it becomes.
