It is a little sharp, but fruity, juicy, sweet and delicious, just like Yui.
The bitterness at the end is typical of a new sake.
After the second day, the bitterness settles down and it becomes softer.
You can tell that they are doing their best in Hokkaido this year too!

The fourth drink was a "hidden sake" that was on the menu.
Yui Yui Special Junmai
Fruity aroma, clean sweetness, and a lingering citrusy aroma with a touch of bitterness at the back of the throat.
This brewery was destroyed by fire in 2022, and with the cooperation of the Sanzen Sakura Sake Brewery in Hokkaido, we brewed this bottle with the same yeast and koji as before, Hokkaido sake rice Kitashizuku, and water from the Daisetsuzan mountain range ✨.
We felt this could be a test case for the various efforts to support the breweries affected by the Noto Peninsula earthquake 😊.

It's refreshing, gorgeous, and fruity.
I haven't had Yui Yui in a while, but even though it's brewed in Hokkaido, it's still as sweet and tasty as ever 😋.
The one I had last year.
Soft, soft, fruity, sweet and delicious.
Easy to drink and doesn't get stuck in the throat.
The bitterness comes in for a moment and then it goes away.

Almost no gas
Slightly sweet with a blue banana-like top note
The same mellow aroma, full sweetness, and full-bodied, robust rice flavor with a thin acidity and a hint of bitterness spread out with a zing, and a little bit of alcohol spiciness makes the wine finish crisp and clean while leaving a lingering rice flavor.
The sweetness is strong, but the richness of the Omachi-like rice, the bitterness in the latter half of the middle section, and the dryness of the alcohol do not bother me as much as it should.
This sake has a somewhat classical and sturdy impression,
It goes well with meals and is also delicious on its own.
It went well with fried Japanese pavilion, miso grilled mino, boiled isotsubu clams, fried oysters, and fried white meat.
It also went well with grilled Hokke.
It also went well with the Australian beef tataki and the pancake with kimchi on top.

When I bought it, the store owner advised me, "The Sanzen Sakura is stronger right after the bottle is opened, but after a day, it will be much closer to Yuki! She advised me "It's the difference of the brewing water", so I put it into practice!
