Sake rice: Dewanosato
Polishing ratio 60
The mouthfeel is firm. Sweet or spicy? Unfortunately, my nose is too clogged up to understand the aroma, but I still felt the fruity flavor. The aftertaste is certainly refreshing.
This is the third year I've bought this classic, and while I was disappointed that the second year I felt the taste had declined a bit, this year I felt it had returned to the deliciousness of the first year I drank it for the first time.
It has a pear flavor, a sour taste, and a strong sake flavor.
It's been a while since I've had Eikofuji.
It has a very gorgeous aroma, and I feel like drinking it!
The clear mouthfeel is followed by a dry, refreshing taste that gradually spreads to a delicious flavor!
It has a clear mouthfeel, but the umami gradually spreads to the palate.
I was drinking it with a red ginger snack in my hand, and as it approached room temperature, the aroma became more pronounced and smelled like tropical fruit.
It's a good thing that I can't help but drink it.
Here is yesterday's closing.
Eikoufuji. I was interested in this one after reading the review of Sake-no-wa, so I chose it by brand name.
Polishing ratio 50%.
Gohyakumangoku from Niigata
I myself have an image of Ihyakumangoku as being light and sharp, but this sake had an elegant sweetness and gorgeous taste, perhaps due to the power of the sake brewer and yeast.
I drank too much yesterday, but it was a fulfilling saki-nama.

Eikoufuji's unfiltered nama sake left a strong impression on me, and I thought that their junmai sake tended to be like that, but I found it to be a sake at the opposite end of the spectrum.
Eiko Fuji's very limited edition sake that only ships one day a year 🍶The innovative bottle that doesn't look like sake and the name Hyper Nova make it very special 😄.
They use a new variety of rice from Yamagata prefecture called "Setsuwakamaru", which might be the first sake that uses this rice 😉.
The ginjo aroma reminds me of a gorgeous lychee, the mouthfeel has a fresh and piquant feel, and the sweet and tasty but balanced with just the right amount of bitterness, it cuts cleanly through the back palate and is a food sake that I never tire of drinking 😋.
