When opened, there is a fine gas feeling. It has a soft koji aroma, a sweet umami taste of rice like coarse rice, and a slightly acidic aftertaste that spreads to a calm taste 😌.
I didn't find the fresh lychee as described on the label, but as I got used to it, I found it to be a flavorful and delicious sake that reminded me of ripe apples and melons 😚.
I put a cutout of the Yatagarasu label on my helmet🤭.

A cup of sake I saw at Mizuhata-san in Toyama. Shitaizumi, whose motif is my favorite cat. I bought it without a second thought, but to my surprise, it was a junmai ginjo, which is rare for a cup sake. It seems to be Hachitan No. 35. For more information, please visit Shidaizumi's website.

Tonight we had a bottle of #Kairyu Junmai Nama Nama Sake from #Shitaizumi Shuzo in Fujieda City, Shizuoka Prefecture. It is a limited edition sake only available at this time of the year.
It goes well with seafood, sweet and spicy food, and rich foods such as eel and yakitori with sauce. It is a really delicious sake that really makes you realize that sake is made from rice 😊.
