Kimi no I Yamahai Junmai, unfiltered, once fired.
This is a new sake, pressed in January of this year, so it has been sitting for about six months. The mouthfeel is smooth and gently sweet, ending elegantly with lactic fermentation-derived acidity. There is no sense of maturity.
◉Kun-no-i Yamahai Junmai Ginjo
Sake with a light overall taste and a refreshingly sour aftertaste. It is said to go well with cheese and other foods.
◉Kiminoi Yamahai Junmai Ginjo Unfiltered Nama-Ginjo
18% alcohol by volume. The freshness of the raw sake and the complexity of the unfiltered flavor. It has a thicker, punchier taste that expands with alcohol.
◉Kun-no-i Yamahai Junmai Daiginjo

◉Kumikun-no-i Junmai Aki-agari
The mouthfeel is smooth and the umami is very well balanced.
It's a bit unusual for Niigata, which is known for its light, dry sake.

As you said, Kimi no Ii is an isolated entity in Niigata, brewing sake different from most of the other breweries. I respect and admire them, but there are not many opportunities to drink this much at once, and I envy them 😆.

You can see the inside of the brewery, you can do tasting, the people at the brewery are friendly, you can buy sake that you can't buy unless you go to the brewery, and the atmosphere is so nice that I feel glad I came.
Well, there are several bottles I bought, but this is the only one I can record. LOL 😆
It has a lot of flavor, a lot of acidity, and even though it's a daiginjo, it has a solid core of rice.
