I bought this at the Fish Market in Owase when I walked along the Umaokoshi Pass on the Kumano Kodo Ise Road.
It is rich and dry, with a hint of sweetness and umami.
It is not my usual favorite sake, but it is delicious.
I heard they use yeast fermented with natural lactic acid bacteria.

I purchased this sake to drink at a hotel during a trip to Mie.
It is indeed Hokosugi! It has a perfect balance of matured flavor and sweetness and spiciness.
The regular sake was a bit sweet and suitable for heating sake, but the honjozo was drier and went well with sashimi.
Mie is full of delicious sake.
This is a regular sake from Hokosugi.
I had previously had a junmai sake from the same brewery, so I was sure before drinking it that it would be my kind of sake, but it turned out to be just right.
Colorless in terms of color, but with a matured flavor that is perfect for warming up.
This is a normal sake. I envy people in the southern part of Mie Prefecture who can buy this sake anytime.
