I bought it for myself but gave it as a gift to the owner of a pub whose birthday was coming up.
I gave it to him as a gift, but I asked him to let me have a sip of it 😅.
It has a unique sourness and carbonation that you can feel or not feel.

I was so impressed by Fukuda Sake Brewery's video on YouTube that I felt obligated to buy it 👀 at a nearby liquor store.
The nose has a grape aroma 🍇.
The overt aroma is also strongly grape-like, with a slightly subdued melon aroma.
It seems to be fire-aged, but it has a characteristic fresh gassy feeling like a fresh sake, and the umami from the sake yeast follows ✨.
The sweetness is there, but not too sweet, and the gasiness camouflages it nicely, so you don't get tired of drinking it at all, and the aftertaste is short and you can gobble it up 😋.
The bitter taste is very sharp and finishes it off well!
I paired it with takikomi-gohan and sauteed white fish in butter and it went perfectly with it 😋.

When the bottle was opened, the cork popped with a small sound, but it was not so loud that it blew out due to the internal pressure alone. Well, it is fire-aged.
The second day, the impression remained the same, and the sake was clean and light, and since it was fire-aged even though it needed to be refrigerated, it seemed to me to be an excellent sake, more mature, calm, and graceful than various other sake. Thank you for the sake.

Fukkai, which I have heard so much about. First of all, the bubbling sound when the bottle is opened and the aroma has a nice winey feel. From the first sip, the acidity of the sake is like a gentle white wine, and yet the acidity is not too sharp, so it is not difficult to drink. The sweetness of the rice can be felt more firmly as the wine progresses, but there is no strange aftertaste.

The palate has a moderate sweetness, followed by a lingering acidity and umami that is typical of a yeast yeast strain. But it is light and easy to drink. This is my first time drinking Fukkai-san, and it is delicious!
