Purchased at Tanakaya at Uonodana in Akashi City, Hyogo Prefecture.
A perfect balance of moderate acidity and umami. It has a sharp aftertaste.
The throat is sharp, yet soft. The acidity, which I don't like, does a good job.
Delicious. It is thick and slightly sweet, but has a good sharpness and a dry aftertaste. The aroma is moderate. There is no fruit aroma, but a lactic acidic flavor. The lingering bitterness is good.
We were served again, this time by the Aoki Sake Brewery.
In a word, it is a great sake. 17 degrees Celsius, but the luscious fruity flavors are so light that you can't stop drinking it. I can't stop.
Entrance clean and sweet.
Moderately heavy.
Similar weight to the previous (Ichinokura's limited edition sake).
An orthodox sake.
This one has more acidity and the umami is mellow.
Neutral.
