For my second glass of Kazu, I wanted to pair it with sashimi, so I went with a dry Masumi. It is a refreshing drink that goes well with sashimi! The fried bean curd is a chicken ball. It is well seasoned and goes well with sake.
One-cup Masumi is available on limited express and Shinkansen trains.
I knew it existed before, but I didn't know there was such a mechanism inside!
I couldn't see it at all when it was filled with alcohol, so I failed to take a picture of it!

We opened a bottle of Hiyaoroshi over two summers, which we purchased at the brewery's store last year, as well as Hiyaoroshi over one summer and three summers in our refrigerator at home.
It has a nice roundness with a bitter matured taste. It started to get a little bit of color and on the second day it opened up even more and the flavor increased.
Aged sake is delicious 😋.

The proprietress of Masumi once told me that sake tastes better when it is matured, but that it is difficult to control the temperature and if the temperature is too low, the sake will not mature well. She said that they have a storage place for maturing sake.

Commentary.
A fruity aroma reminiscent of apple honey and white peach rises from the glass. In the mouth, a soft sweetness spreads, and a pleasant bitter nuance appears from the middle to the latter half of the palate, leading to a clean and crisp finish. The gorgeous aroma and dry taste are beautifully harmonized.
