Masumi Shinshu Secret Sake Hanpukai 2025 Gold Course

I looked it up and found that the image of the leaves of the Miyasaka Brewery's family crest [ivy] floating on the surface of the water is expressed in the shape of a circle, which is the harmony of the brewer's motto, "Wa (harmony) brewing good sake".

The aroma is like a soft rummy, and the mouthfeel is soft and floral with a sweet umami flavor that finishes gently with a refreshing sweet aftertaste like a rummy.

The fruity, aromatic, refreshing, and delicious flavor of the first day is the strongest. The balance is the strongest, not too heavy and not too light.

On the second day, the fruity and aroma was lessened and the sweetness increased, so I prefer to finish it on the first day after opening the bottle.

First time, it's Masumi! The No. 7!
The aroma is somehow earthy. It draws you in. The mouthfeel is viscous and silky on the tongue. The taste is very silky on the tongue, combined with a refreshing alcohol taste that will make you want to drink more.
The light brownish color of the sake is also somewhat soothing.
It gave a stylish classical impression.
Although it is a pure sake, it is not heavy and has a really good balance. It has a full rice flavor, freshness, crispness, a hint of acidity, sweetness, and a mild aroma like chestnuts that passes through the nose, all of which can be tasted.
You can also taste the freshness of freshly squeezed sake. It was recommended to me at a liquor store, and I am glad I got it. It matched perfectly with raw oysters. It is an exquisite match. I had sashimi, raw oysters, tempura, and many other dishes, but by far the raw oysters (ponzu) were the best match.

But I'm comparing it with my faint memory, but it's a little different from what I drank last year. Last year's is described as slightly carbonated and sweet. This year, it is sweet at first and tasty at the end, with a momentary acidity in between. It is interesting. I left about half a cup at the end and savored it slowly.
I slept well (only with a feeling, I'm sure my sleep was shallow 😆).

Slightly banana-like aroma. Wow, is this new sake? It is much darker and has a sweetness like plum wine. Ah, but there is definitely a freshness in the aftertaste. I was surprised at how delicious it was. It's a new sake that doesn't seem to be a new sake.
