I had enjoyed it so much at a toast at an event hosted by a local liquor store that I bought it in November, even though the price was high for an individual, and put it aside to enjoy until Christmas.
This time, I had it as an aperitif for a toast, and the sweetness was in full bloom, making it a true adult juice. It is too luxurious.
There was no sourness or bitterness at all, and the sweetness of the rice was more than enough. We opened the bottle for a pre-dinner toast, but it went well with roast chicken without any discomfort, so the drink went down smoothly and we drank the entire 720 ml bottle in no time at all.

I used to have an image of dry Houraisen, but both unfiltered Shiboritate and special junmai were easy to drink with a good balance of sweetness and umami. The sparkling wine was served as a toast to a meal, and it was light and mellow, just like a sweet white wine.
