Omachi rice produced in Okayama Prefecture is used for the sake rice.
Unlike Yamadanishiki, Omachi must be difficult to grow in Saga...
The aroma is fruity and white grape-like.
It also has a hint of apple.
On the palate, the first taste is sweetness, followed by bitterness.
The moderate acidity and light bitterness also add a nice accent.
As expected of Omachi!
The mille-feuille of flavors and the multiple structures are superbly produced.
In total, it is as dry as Mitsutake!
Sake is +2, but it feels spicier than the number ❗️.

When I was working at the Saga branch, there was a person from a cooperative organization who used to boast about his hometown, saying "I love this local sake the best!
He passed away a few years ago, but I was grateful for all he did for me...
Yamadanishiki (contract rice) produced in Kashima is also used!
The initial sweetness (pear-like fruity) is stronger than that of Kouhime❗️.
The mild sweetness spreads in the middle of the bitter taste with acidity already catching up 😅...
It leaves a lingering aftertaste and is easily quenched.

We got off at Hizenhama Station (Kashima City, Saga Prefecture) on the Nagasaki Main Line.
If Kyushu becomes an independent state, Kashima City in Saga Prefecture will be a strong candidate for the sake capital 😁.
We only had less than 2 hours to spend in the city, so we first wandered around the station area.
The sake brewery street near the station is literally dotted with sake breweries.
We also took a peek at Tomikuchiyo Sake Brewery, famous for its Nabeshima sake.
But it's not popular on a Sunday afternoon 😅...
Is it always like this?
After 30-40 minutes, we returned to the station and went to "Hama Bar", a sake bar attached to the station building.
I was told about this place by Rumion-san and Rika-san, and I was really looking forward to going there.
We challenged ourselves to a junmai ginjo drink comparison (800 yen) from 5 different sake breweries in Kashima👍!
We had Ariake seaweed and cream cheese 🧀 with our entrée 🤗.

Fruity aroma of Japanese pear.
Smooth and smooth with sweetness and umami.
