100% Yamadanishiki from Higashidegumo-cho, 100% limited edition unpasteurized sake It is heavier in the mouth than Takemichi. A little bitter, but not bad. It has just the right amount of sweetness and I think it's because they're not so persistent. It goes well with Jinhua mackerel. I'm also using 9 pounds of yeast. Takemichi: 100% Yamadanishiki from Higashidemichi Apparently it was the name of the Toji of the Oroku Sake Brewery Drinking with the Oroku Gently sweet and delicious. I liked this one better than the King's Crop. My vocabulary is so poor. I've been thinking about how to describe it. As I was checking and drinking. It's gone. lol.
