I think this may be the first time I've ever had such an elegant and dark Muscat! It's sweet and tasty, and on top of that, it has a strong sake flavor!

The aroma is gorgeous, with a freshly pressed aroma that is unique to the ultimate Shiboritate. The taste is fresh, with a strong acidity and gas, and a sweetness that makes you wonder what it would taste like if you drank it straight from the brewery's barrels.
Kura Master 2024 and 2025 1st prize winner in the Junmai-shu category.
The acidity is moderate and delicate! The soda-like taste on the tip of the tongue is immediately followed by the taste of the aroma of wealth.
At the back of the tongue, there is a hint of sourness, and a thin hint of sweetness like Mont Blanc 🤤.

I've only had Tsubasa 50, so I took this opportunity to try some more 🙂.
It's like you can drink it gubigubi in summer!
It has a slightly dry taste, but the moderate acidity and the fine flavor of Yamadanishiki are in harmony with the youthful freshness and crispness of the sake.
We enjoyed it with crab cakes!
Sake meter rating: +4 to +5 (slightly dry to dry)
Acidity: 1.2 to 1.5 (standard to slightly high)
The high acidity not only makes the sake spicy, but also gives the sake a strong umami taste of rice and a tight aftertaste, leading to a "graceful and bold" taste.
