Note
Hiyayoroshi is sake made by heating and sterilizing (hi-ire) new sake squeezed in the winter, storing it from spring to fall, and then maturing it before shipping. The name "hiyaoroshi" comes from the fact that the stored sake is "unloaded" from the vat or tank in a "hiya" state for shipment in the fall, when the outside temperature has cooled down. It is characterized by a mild, smooth, and mellow flavor that has developed over the summer, and is considered a seasonal sake to be enjoyed with autumn flavors.

Haneya Junmai Kinjo Hiyaoroshi 羽根屋 純米吟醸 ひやおろし
I got a glass from a regular at the next table and drank it. It had a unique spicy aftertaste. Oh, and Hyaoroshi is simply a limited sake that was released in the fall.

It has a good balance of sweetness, acidity, and full-bodied flavor. The acidity is a perfect match with the sweetness and umami of the rice, which is moderated by the aging process. The full, clear umami fades out with the beautiful acidity. Brewed with Kanazawa yeast, it has a dignified taste. The touch is soft. The convergence is also a little mild, with a light aftertaste of sweet, sour, spicy, and bitter.
