This was the first bottle at a dinner with business partners at Ningyocho Ningyoke.
It is an active junmai sake, which means it is slightly effervescent and has a good mix of bitterness and sweetness. As the first bottle, it was very easy to drink and suitable for Japanese food.
It was difficult to photograph because the focus was on the person across from me 😤.
Beer x 2 -> Kariho -> Ginrei? → Hikoso → I forgot 😂.
Autumn is deepening and I went to go autumn leaf peeping. While feeling the season, I opened a bottle of this one today: 💁♂️
Let's start with the standing aroma. It has a faint aroma of ears of rice and sweetness of rice.
In the mouth, there is a strong acidity with a fruity taste like muscat, which passes through the nose and finishes with umami and a sharpness.
Serve with chicken dumpling hot pot (🍲). The chicken and sake harmonize in the mouth, and the mouthfeel is smooth and relaxing. After all, nabe goes well with cold weather. ☺️

First, we visited Miyagawa during the daytime to confirm the location of the new participating restaurants and have lunch.
We had lunch and ordered some delicious sake while considering the order of stores to use😅.
I think this sake is mellow, full-flavored, and the rice flavor also spreads in your mouth.

I've never seen it outside of this restaurant... 😳
Jun Dai-katsu Heisei 2008 (9 years ago!) Only clean watery and elegant light sweetness despite the aging of the brew, no waste at all and a taste that cuts right through...!
I wonder if the reason why it doesn't become a colored sweet aged sake is that it is kept in a cool environment all year round 🤔...!
I'm always ordering this when I come here because there are very few similar sakes ✨.

The hot summer is long gone
I opened the sake wrapped in newspaper and
I found summer sake.
I opened it and thought, "Let's drink it for goodness sake.
It has a thick texture on the tongue. The bitter-sweet aroma that penetrates the nose.
It reminds me of the countryside at the beginning of summer.
The taste is round and thick, but also refreshing.
