Shiga Local Sake Festival in Otsu 202515 Ota Sake Brewery and Doukan booth. BOU sake shop owner who greeted us right after the opening said it was delicious, so we didn't forget to sample it. ◉Doukan Tokubetsu Junmai Nama Hashiwazukuri The standard flavor is here. The sake has a clean acidity and umami flavor. This is the first sake made this year using the kamishige method. The rice was hard to come by, so Miyamanishiki from Nagano Prefecture was used. ◉Doukan Tokubetsu Junmai Jusui Shizukomi Nama-nazake Clear, rich sweetness and concentrated flavor. It is quite my favorite and extremely tasty. This is the second year of production, and the first was a popular product that sold out immediately. The brewer who took care of it was in a hurry to get it back to the head office because it was sold out. I wish I could have bought it. ◉Special Junmai Nama-nazake Shiga Watabune No. 6 The sake is very umami, authentic, and delicious. The harmony of umami and sharpness. The production is said to be higher than that of the Chiyoda brewery. As expected from a certain izakaya, there were many delicious sakes.
