I bought this 180ml bottle at "Takahashiya" at the east exit of Echigo Yuzawa station on my way home the other day.
It is a sake from Shirotaki (nationally known as Kamizen Nyosui).
I think it used to be called "Shingo no Ippon," but the current toji is Nobuki Matsumoto (Takaki), and this junmai daiginjo bears his name.
I am grateful to be able to taste it in a 180 ml bottle, as I don't have the opportunity to drink the high-class daiginjo class, which is expensive and not an everyday sake.
As expected, the taste is of a high level.
It is smooth and the aroma is very pleasant.
The impression of the latter half of the bottle is that it is dry and has a dignity that does not float.
The sake was sweet but insisted on being refreshing. We had it for Father's Day along with the Niimasa I posted yesterday. I was surprised at how well sake goes with my personal favorite natural cheese, Boursin Garlic & Herb.

The aroma goes to the nose and disappears quickly and cleanly.
This was my favorite one of the day.
