Alcoholic, fruity, exiting with alcohol. Beautiful type
A sake to be drunk quickly after opening the bottle.
A little milky and astringent when lukewarm.
Isoboast's Blue Bottle Series
Using only rice from the fields of Furuya, Nishido, and Tsuneda in the Tojo Akitsu district, the production area of Toku-A Yamadanishiki, this sake is like a single vineyard in wine!
The aroma is gorgeous and complex.
The aroma is fresh and fruity, with a hint of green melon, white flowers, herbs, and a hint of sweetness, as if the fruit is still in the process of ripening.
The taste is quite full, with a refined sweetness and umami.
Not only does it combine rice and melon flavors, but it also has a delicate and deep taste with just the right amount of alcohol sweetness and bitterness.
It has a smooth mouthfeel without the stimulating spiciness of alcohol.
Compared to the Isobojimas I have had so far, this sake seems to be a step above in quality!
I said yesterday that I prefer Omachi to Yamada-Nishiki, but now I have to change my opinion.
Comparison of Isobojimachi's Omachi
Almost the same specs when it comes to acidity except for rice polishing ratio
The aroma is the same blue melon type, but there is a distinct difference.
Floral and alcoholic aroma can also be detected.
The main taste is more pure and umami compared to Omachi 53.
Then the sweetness of rice and alcohol comes out, and it finishes with the bitterness of alcohol.
The taste is clean but also deep and rich, as is typical of Isoboast's daiginjos.
Delicious!
Compared to Isoboast's Yamada-Nishiki, Omachi's sweetness and umami of rice comes out more in the front, and it is more satisfying to drink, which I personally highly appreciate.
Special Junmai made from special grade rice from Akaban Omachi
The aroma is rather mild, but very fruity and clean with a green melon-like ginjo aroma.
The taste is also very fruity with a full-bodied sweet flavor, but it is not the boldness that is typical of Omachi sake, but rather a very delicate and soft flavor.
There is not much acidity or alcohol, but it is clear and refreshing, and the aftertaste is like drinking water, in a good sense.
Very easy to drink and delicious!
Although it is only Tokujun, the quality is usually on the level of Daiginjo.
It is a good sake that clearly shows Isobojiman's careful craftsmanship and high technology.
