At first, I couldn't taste the umami and the taste was clear.
But as I drank it at room temperature, I could taste the sweetness.
But as you drink it at room temperature, you can taste the sweetness and it goes well with Shiga's local food.
After the tasting at Nishimura Brewery, we headed to Nagahama and stayed overnight.
Since we were halfway through the day, we skipped lunch and instead enjoyed a piece of saba-zushi (mackerel sushi, 700 yen 😳), funa-zushi (funa-zushi), and sweetfish nuggets at the hotel, which my husband bought for us.
Nagahama Roman beer was also delicious and full-bodied.

When swallowing, you can taste it from the back teeth of the lower jaw...you get the idea...
There is no sweetness at all, but the aroma is slightly sweet.
This sake has a special junmai-like simplicity with a gradual umami taste. I don't feel that much of the characteristics, but that's good.
I'm happy to find a sake from a brewery that is probably not so well-known ☺️.
I enjoy a variety of sake from Shiga Prefecture 😏.
Blue drinks
Aroma is normal sake, soft attack. The taste is crisp and dry, with a light mouthfeel. It goes in smoothly and has a light aftertaste.
The blue herb "butterfly pea" was blended to express the bright blue color of Lake Biwa while maintaining the flavor of ginjo-shu.
The flavor is said to be "blue".
It looks cool and is suitable for summer. I finished it while I was loving the color😅.

I've been interested in Kohama for a long time, but this is my first time drinking it.
It is said to be a blend of special junmai and junmai ginjo that has been brewed over one summer. The flavor of the rice has a light ripeness, and the acidity is beautiful. It has a nice acidity, and is relatively clean and crisp.
Personally, I would like a little more sweetness.
The first sip after opening the bottle gives the impression that it is hard.
After about 3 days, I drank it again and the umami increased and it became more delicious.
I enjoy this kind of change in sake.
