Rice flavor and clean feeling. Dry but good sweetness of rice. Good food sake. It must be a land with good water. It is a sake that you can keep drinking by itself without getting bored.

This is a sweet sake from Yamakami that has been laid up for almost a year. I think I bought it at the brewery when I went to Takayama because I like to travel to Gifu, but my memory is a little hazy... lol
I tasted this sake at the brewery almost 10 years ago, and it was the sake that got me hooked on sake. I drank it a few years ago, and I wonder how my impression of it has changed since then.
It is made with flower yeast and has a gorgeous aroma. You could say it has a floral aroma, or you could say it has an aroma unique to ethyl caproate.
It is sweet and easy to drink as a stand-alone. I used to love this kind of sake and drank a lot of similar ones (lol)! Of all the sake I've had recently, Jyushiyo is the closest to the image I have of it. In that sense, it is a very popular sake, isn't it?
My personal preference these days is for isoamyl acetate, so it's not exactly right in the middle of my tastes, but it's the sake that got me hooked on sake, so I have a strong emotional attachment to it.

Sake at home. The rice flavor, acidity, and spiciness are well balanced, firm, and refreshing. Fruity and crisp.
ALC 15-16 degrees. Hidahomare rice is polished to 55%.

I met this one when I traveled to Gifu, and it is my companion for this evening. When you open the bottle, the fruity aroma is unbearably pleasant. The juiciness is in full bloom and makes you salivate. When you put it in your mouth, despite the aroma, it has a firm dry taste. The sharpness of the throat is wonderful. I wonder if a weak bitter taste remains in the throat. After a salad with mentsuyu/vinegar/yuzu kosho, the bitterness weakens and the refreshing taste improves. When paired with fried eggplant with garlic, it has a subtle sweetness that is also delicious. Today's main dish is fried horse mackerel with tartar sauce. It goes well with dry sake. It also goes well with salty bone crackers.
The second restaurant is Harada Sake Brewery across the street.
The summer sake, ginjo-shu, is refreshing and delicious.
You can also visit the tanks where the sake is being brewed.
There is also a tasting corner for a fee. A group of tourists from abroad was tasting the sake.
After leaving this brewery, my senior lost his sake book. At the next kuramoto, we were told that they could not reissue the book.
When we went back to the brewery again, we found that he had left it on a bench in the tasting area and it had been delivered to the kiosk.

Sake in Hida Takayama. Convenience stores in Takayama carry a wide variety of local sake. I wonder if each sake brewery produces a single-bottle product so that it can be easily purchased at convenience stores.
Abellia flower yeast. It is very fragrant and has a sweet taste like honey from flowers. It may have some additional aroma, but it is amazing that it can produce such sweetness and umami without being an alcohol-added sake.
The alcohol content is a little strong, and although it is not labeled as a pure sake, it is 17 to 18 degrees. It is a good sake to be drunk with a fatty meal.
I got it as a local sake on a trip. It was moderately refreshing, subtly gorgeous, and suited the food well. It was a sake brewery in Takayama, a no-name sake brewery, but it was delicious and good.

This is the last sake I bought in Takayama in 2014GW.
The Department of Brewing and Fermentation, Junior College of Tokyo University of Agriculture isolated it.
It uses Abelia flower yeast isolated by the brewing department of the Tokyo Agricultural Junior College.
They say it makes fruity sake.
