Junmai Ginjo Ito no Kashi ⭐️⭐️⭐️⭐️ The label said [Toyonou Ume] 🤗. 100% Tachiharuka grown in Kochi Prefecture Polishing ratio 60%, ALC 14 degrees Kochi yeast CEL24 I had Saku Junmai Honochi as the 13th sake in the Nihonbashi Tasting Walk 2024. I had already met it in January 2020, so I decided not to post it 😋. Nihonbashi Tasting Tour 2024-14th type I wonder what this aroma is... I think it's fruity, but I'm getting confused😅. But I think it is a delicious sake with a pleasant acidity and mouthfeel, although it is a little sweet. Horidome Park, Nihonbashi: 20240413

The 7th Matsuo Taisha Sake-1 Grand Prix 21 Toyonoume's booth. This is another unknown brewery in Kochi with a sales volume of about 300 koku. I wonder if they have been replaced by a new brewer, Mr. Kazuho Takagi (6th generation) from Mr. Naoyuki Takagi (5th generation). The Junmai Ginjo Shiboritate Nama Shuzake version is a refreshingly sweet and acidic sake. It has a refreshing sweet and sour taste, with a little bit of sake. A little bitterness at the end. Ito wo okashi Junmai Ginjo Activated light nigori Active light nigori with CEL-24 yeast. The aroma is fruity and gorgeous. The overall impression was that it would be sweeter, but at the end, it was surprisingly dry with a hint of sweetness and bitterness. It was originally supposed to be made with Kochi yeast, but CEL-24 yeast arrived by mistake. That's why the name "Itookashi" was chosen. It was also different from the image of Kochi sake.

Matsuo Taisha Sake-1 Grand Prix 21 Toyonou Ume, which has been attracting a lot of attention recently due to the influence of the crazy salad pavilion. I drank Junmai Ginjo Nama Shu Matsuyama Mitsui, Polishing ratio 50%, Sake degree +2, Alcohol 16%. It is delicious with just the right amount of sweetness. I think only Saladokan carries Toyonoumai's nama-zake 🤔I think Ikari Supermarket carries the fire-brewed version. Ito wo okashi junmai ginjo katsudo usun nigori Tachiharuka (don't know the rice 😳), 60% polished rice, -10% sake, 14% alcohol. Sake made with CEL-24 yeast. I haven't had it in a while 😋. It's shwitty, pineapple sweet and tasty, with a refreshing acidity. It's a 500ml bottle, so it's the kind of sake I'd drink at home 🤣.

Sake made with CEL24 yeast from Kochi. I drank the fire-aged version before, but this is a draft sake. The aroma is fluffy and tropical. The mouthfeel is sweet, and the juicy acidity that spreads on the tongue is just like a fresh pineapple. The aftertaste is clean, so you can drink it in large gulps. I prefer the taste of nama-shu. Tachiharka rice is said to be delicious as rice rice.

Sake purchased at Tomekawa Sake Shop, aka Salad Pavilion. The rice is Matsuyama Mitsui from Ehime. It is fresh and gassy. The overall impression is dry, but as the brewer and the liquor store say, it has a strawberry-like flavor. Once again, the sweetness is moderate.

Just a reminder 🙏. Today, after going to "Yakiniku Yamato" for the Banchoukai, my comrade-in-arms and I came to "Tatsumiya" 🍶. The first sake we had was orizake. After yakiniku, this refreshing drink is the best 😆.
