Why this Hokkaido sake 🤔?
I asked the owner of the restaurant.
He said it accentuates the flavor of fugu 😎😎.
In fact, it seems that Hokkaido is also the largest catcher of blowfish 🤓.

It has a clear sweet mouthfeel as if one were drinking melted snow, but before one swallows it, the mellowness, crispness, and subtle acidity unwind and disappear without unpleasant taste.
This is a sake from the North Sea that should be drunk cold, even if only for a few minutes.
First, it was served cold. It was smooth on the palate, but not very powerful. I thought this was a good idea, so the next time I had it warmed up, the flavor of the sake spread out.
The mouthfeel is sweet. Swells a bit in the mouth and disappears with a slight sourness. It is not felt on the tongue, but there is a sense of alcohol, and it may be easy to get drunk.
But it is delicious!
