The smell is similar to that of Shinsei.
When you drink it, the acidity, umami, and lactic acid bacteria balance each other out and spread on your palate. It is delicious!
The first impression is that it is a beautiful sake.
It is not too fruity, nor is it overly fruity, nor does it have any off-flavors.
I want to brew sake that is delicious not by polishing the rice but without polishing the rice. This sake was brewed with the desire to provide a delicious sake for everyday toasts, and we could truly experience this desire.
