Famous for its locally brewed beer, the company's sake is consumed mainly in its hometown of Hitachi City and other areas in northern Ibaraki Prefecture, based on the philosophy of brewing sake that is loved by the local community. Ultra-soft water from the premises is the brewing water.
◉Kikumori Natsuhatsugetsu Nama Junmai Ginjo
The taste is very sour and acidic. It is quite distinctive, a bit like a country sake, and has little sweetness or umami.
◉Kikkusakari Pure Ibaraki Junmai-shu
A strong country sake with a combination of sweetness and a little sourness.
I forgot to take a picture of this one, so I borrowed it.

Kiuchi Sake Brewery in Naka City
I've seen them selling single-batch bottles at stores that sell imported food and wine, but I've never had it.
I've had Yuzu Lager from Hitachinonest Beer though😅.
Are they more famous for beer or plum wine?

Kikumori Natsuhatsugetsu Nama Junmai Ginjo
Polishing ratio 50%, 15%, 2200 yen
Sweet but with a strong acidity and sourness. It has a unique taste.
It tastes as if it were a 🫶.
Kikumori Pure Ibaraki Kaze to Mizu Junmai
Polishing ratio 55% Hitanishiki Hitachi Yeast
Brewed in wooden vats. The acidity is also impressive.
It is fire-aged but feels fresh.
The red color derived from ancient rice is beautiful.
Cold: It starts out tasting a little like a sake yeast yeast with a sweet and sour fruity aftertaste.
This was the first time I had ever tasted sake with such a distinct color.
It has a slight effervescence because it is bottled freshly squeezed sake. It has a slight effervescence, but only to the extent that it tingles on the tongue.
It is fresh and tangy, and the spiciness lingers on the tongue.
It is delicious. It is a good sake.
