The weather was fine, so I went to Kutoyama to buy persimmons. Koyasan in a few days. Quicksilver and gaijin. No foreigners got off at Kutoyama. Tourists were mainly Japanese. It was interesting to explore a town that lives in history. The shiitake mushrooms in the kakinoha sushi at Kowaraku, which sells out quickly, were delicious. In any case, persimmons are delicious in Kutoyama. Kishu Komari's large persimmons were delicious. The appearance of the Kino sake cup was a very dark yellow color. The taste was classic and robust, with a hint of sweetness and bitterness that went well with the persimmon leaf sushi.

This is my first sake. Kinoji Shuzo Kishu Nagamine Junmai-shu (Junmai-shu made in the cold). It is a delicious sake with a rich flavor and is easy to drink. 1.100 yen for a bottle is very reasonable. Although this sake is from the Takagaki Sake Brewery in Wakayama, Japan It is a sake made by Takagaki Sake Brewery in Wakayama, but it does not seem to be widely available. The sake rice is Yamadanishiki, 50% polished rice. The sake itself has a slight yellow tinge. The impression one gets from drinking it is that it has a rice bran taste and a sourness derived from it. It has a sour taste derived from the rice bran. It is not the mainstream taste nowadays.

<"Aged, nostalgic honey sweet sake. This is a different brand of Kinosake from the Takagaki Sake Brewery of Ryujinmaru and Kisetsuru. And it was made in 2010! It's 11 years old! Hmm? Takagaki Shuzo's 2010? That means it's the same as the Kiseizuru I drank before! Actually, in August of that year, the 8th generation brewer, Junichi Takagaki, passed away suddenly at the young age of 46. This was his last brew. This is such a special sake. We will drink it with care. The color is a slight yama-buki. The aroma has a wonderful honey-sweet matured feeling. When you put it in your mouth, you will feel a gentle sweet and sour taste. In the latter half of the taste, the umami taste comes out. At the end, the bitterness of aging appears a little. It has a complex taste with a sense of nostalgia and the accumulation of years. However, there is no deterioration at all, and it is beautiful. It is delicious. If I compare it with Ghibli, it is Mr. Nishi of "Mimi wo Sumemeba". He is the grandfather of Seiji-kun. He has aged in a gentle way. He had a sad experience in the past, but on top of that, he has the happiness of living in the present.
