<"Aged, nostalgic honey sweet sake.
This is a different brand of Kinosake from the Takagaki Sake Brewery of Ryujinmaru and Kisetsuru. And it was made in 2010! It's 11 years old!
Hmm? Takagaki Shuzo's 2010? That means it's the same as the Kiseizuru I drank before!
Actually, in August of that year, the 8th generation brewer, Junichi Takagaki, passed away suddenly at the young age of 46. This was his last brew.
This is such a special sake. We will drink it with care.
The color is a slight yama-buki.
The aroma has a wonderful honey-sweet matured feeling.
When you put it in your mouth, you will feel a gentle sweet and sour taste. In the latter half of the taste, the umami taste comes out. At the end, the bitterness of aging appears a little.
It has a complex taste with a sense of nostalgia and the accumulation of years. However, there is no deterioration at all, and it is beautiful.
It is delicious.
If I compare it with Ghibli, it is Mr. Nishi of "Mimi wo Sumemeba". He is the grandfather of Seiji-kun. He has aged in a gentle way. He had a sad experience in the past, but on top of that, he has the happiness of living in the present.
