Ishizuchi is one of the most popular sake breweries in Ehime.
This sake is brewed with Matsuyama Mitsui produced in Ehime Prefecture.
It has a mild aroma, slightly fruity.
I had an image of a rich, mellow sake, but the taste is unexpectedly refreshing, and I can sense the umami of the rice.
There is no gassiness, and there is no cloying taste.
It has a nice sharpness, and it disappears quickly after swallowing.
It made me want to explore more of Ehime ✨.

The aroma is mild, and the slightly acidic flavor is mild, just like hiyaoroshi.
It finishes with a slight bitterness and spiciness.
Not only is it mild, but it also has acidity, but it is not too much, and the end result is a perfect Ishizuchi hiyaoroshi.

Strong acidity on the palate, followed by the pungency of alcohol and the sweetness of rice. The aftertaste is refreshing and does not linger.

It goes well with seafood entrées.
