This sake has a fruity ginjo aroma, which is very Junmai Ginjo. It is a slightly dry and crisp sake with a hint of acidity.
Today's sashimi platter consists of five pieces of kampachi, salmon, firefly squid, sea bream, and bigeye tuna.

This is the second sake that uses Tokyo University of Agriculture's "Princess Michiko" flower yeast, after the "Toyo Bijin Junmai Daiginjo" that I met in 2020.
Refreshing aroma. Apples? Young melon? Sweetness like This is delicious. There is not much acidity, and the aftertaste is weak. Maybe that's why it is so easy to drink and keeps you going.
So, Tokushima is the only place left in Shikoku. We still have a long way to go to conquer Japan.
Ishizuchi Junmai Daiginjo
The aroma is not that strong.
It has a heavy, robust flavor, but the aftertaste is clean and crisp.
It has a delicious flavor and is easy to match with food.
