This sake is made by Shirakiku Shuzo in Takahashi City, Okayama Prefecture.
It is a nigori sake that tends to be sweet, yet very spicy in spite of its shwashiness!
The aftertaste is also rich with acidity and complex flavor. Very tasty.
How was it made in the ikuhashi-zukuri style? 🧐
However, I found it hard to recommend this sake to people who are not used to sake. It is deep.

Shirakiku" is named after the "white chrysanthemum" flower in autumn, when sake is at its most mature, and "Daisen" after the honor prize it received at a national sake competition in the year of Emperor Showa's accession to the throne.
I tried it because it claims to be for carbonated drinks only, and it says it's 1:2 with lots of ice (......), but it's best as it is😅
I don't like to drink sake (in this case, sake) mixed with other drinks, so maybe it's just not for me. Without ice, it has a brassy smell, so I prefer to dilute it with ice and chill it.
Tasting it as it is, it is certainly made to be enjoyed with a splash. It is not spectacular, but it is robust, dense, and full of flavor. If only it were a little sweeter and more acidic. Slightly yellowish, with few legs, thin but strong.
After a month, it has become much mellower and sweeter. It tastes much better if you let it sit after opening. Cracked open? No, I don't think so. ......
I was attracted by the catch copy "rice juice" and bought a bottle.
Really? I sniffed it, and the smell was of full-bodied rice!
When I put it in my mouth with high expectations, the rice flavor certainly came to the forefront!
No fruity fruitiness, no modern acidity, just a simple taste of umami and strong bitterness reminiscent of plump white rice!
Not so much a classic, but this is sake! A bottle that makes you want to say, "This is sake!
The copy of rice juice is also understandable!
How to drink: chilled
Aroma: Solid orange aroma
Taste: Almost no sweetness, with a slight sourness. The taste is very clear and delicious, as is typical of Junmai Daiginjos.
