Takashimaya's Sake Festival (¡Ω) Daisenji Shirakiku bought this one among a lot of good sake. Is it shochu? It's so dry but the flavor is a little sharp! Even when heated, it was mellow, but the dry sharpness was still very sharp! I had it very cold at the site, and it was also wonderful! I'm a fan of heated sake, but I thought it should be chilled! Mr. Ota lives in Otaru! I love Otaru too, but I've never heard of fried noodles with starchy sauce because I'm always looking for things from the sea! I envied him when he was eating oysters at an izakaya! I could tell he was full of energy because he was swaying like Mr. Carlos Tosiki while singing "Otaru no Hitoyo"!

Hello Shinjo 🐦. I finally watched the Otaru episode ✌️ really 🤣I'm reminded of Carlos Toshiki with his swaying & voice too😆I've never even had shako so I'd love to eat it with some local sake😊.

Good evening. I secretly think that shako goes well with Shiga sake. It's a pity that it's an ingredient that's hard to find, but I definitely recommend it! Mr. Ota's office has jazz records, but izakaya is for enka and uta songs!

Takashimaya's Sake Festival (・ω・`) There was a dry sake that suited me, so I tried it and decided to buy it at once! However, it looked like I could try them all, so thankfully I did! Junmai Sake Triple A Hi-ire It was released as a one-time-only project sake, but it sold well, so it was commercialized as it was! It has a sour taste and will surely sell well! The logo was also a simple idea, but they thought it looked like something from a conspiracy group, so they used it as a toy. Junmai Omachi 70 There are many kinds of sake brands, and this one is a robust type. It has a strong lactic acid taste, but has a beautiful mouthfeel. I have bought it before, but it was a different impression from that time. At that time, I was told to let it sit for 6 months because it was hard, and when I opened it and drank it right away, it was so dry! It seems to change every year. Junmai Shirakiku Rare rice Soft but with a good density of flavor. Junmai Zoshunishiki Very rare rice Firm but smooth! About 5 bottles were sold during the time I was at the booth! Bishu Three kinds of blend It has a rich and complex flavor that you would expect from a blend. Junmai Daiginjo It has a strong flavor that can only come from low-temperature aging, and it has a nice sharpness and richness. I will write more about the super-harshness in the future due to the lack of characters.

The 7th Takashimaya Sake Festival (3) I drank it because it was a sake rice I didn't know. I drank Daisen Shirakiku Junmai Shirakiku Rice It's from the Omachi lineage, so it has a little Omachi-ness to it. It has a rich umami taste, which I like a lot. Daisen Shirakiku Junmai Yumachi-70 A little sourness. As the brewer said, it is also good warmed up. Daisen Shirakiku Junmai Shuzo Nishiki It is said to be read as "Miki-nishiki. They said they found this rice in the process of searching for Shirakiku rice. It is difficult to describe. I felt it was a little too refreshing, but I was told it was because of the order in which I drank it 🤣.

Osaka Takashimaya] The 7th Takashimaya Sake Festival⑤. The booth of "OHJITSU SHIRAIKIKU". Zoshu-nishiki (Mikinishiki) and Shirakiku rice were commonly used until the 1960s, but with the change in sake brewing to fast brewing, the one-and-a-half-gun local rice has apparently been eliminated. ◉Junmai Sake Zoshu Nishiki This sake is made from Zoshu Nishiki, a strain of Yamada Nishiki discovered in Okayama. It is a bit complex with a rich flavor. The aroma is unique, with a slight alty taste and a pleasant nose. ◉Junmai-shu Shirakiku-mai Shirakiku rice is a sake rice that used to be famous in Aichi and Shizuoka and has the same name as the brewery. Kaiun tried to revive it, but it did not work out. Kaiun tried to revive the rice, but it didn't work out. It has a clean and refreshing taste with a spicy aftertaste. The aroma is slightly deep and lingers in the nose. Junmai Triple A A blend of three types of rice. Slightly acidic with a slight sourness. Bishu Junmai Ginjo A blend of three different types of sake aged for one or two years. It is not flashy, but it has a deep and rich flavor. ◉Honjozo Super Dry Dry and refreshing. +It is a dry sake with no sweetness. ◉Nishiho Junmai Omachi Nanaju No yeast added. It has a strong umami and is not sour, but it is milky and delicious. Junmai Daiginjo Aged for 1-2 years, it has a mild flavor with a sharp, clean aftertaste.

This is one of a series of souvenirs from Okayama. The sweetness like white peaches comes in quickly. The aftertaste is spicy, sharp, and tight! It is a typical Omachi.

This sake is made by Shirakiku Shuzo in Takahashi City, Okayama Prefecture. It is a nigori sake that tends to be sweet, yet very spicy in spite of its shwashiness! The aftertaste is also rich with acidity and complex flavor. Very tasty. How was it made in the ikuhashi-zukuri style? 🧐 However, I found it hard to recommend this sake to people who are not used to sake. It is deep. Sake degree +13.5 Acidity 2.1 Amino acidity 1.9
