Looking around the sake store, I found here in the corner: ❗️ It is a small sake brewery on Sado Island.
It has a soft, calm and fruity taste, with a strong sweetness of rice and koji aroma. Here, we had takoyaki as a side dish. The chemistry...hmmm...perhaps it is because the acidity is moderate, but when the temperature is lowered, it becomes a bit limp.
When warmed up, it has a rich and umami taste as if you were eating fine sake lees. ⤴️ It goes well with sashimi.
Thank you very much for your kind attention.
Good evening, Kotori-san😄Have you had the solstice drink? It is delicious, isn't it? I like Sado sake and I've had it too, but this Itchi is not the light and dry Niigata sake, but has a strong umami flavor! It certainly goes well with sashimi, doesn't it?
Good evening, Sashiu-san!
I was so happy to see you at a sake store that I dropped by casually when I had some business nearby 🤗I was wondering about Kirinzan, which is a light and dry sake, but this time I went for Itaru. It was indeed! It was full-bodied and good with chikuzen-ni (boiled and seasoned vegetable) and other dishes 😋.
Niigata sake at a travel bar near Niigata Station on the way back from a visit to Niigata last week to watch a high school baseball game.
It was the first time for me to try Hiyoroshi.
The spoils of a bullet train trip to Niigata💪.
It has been a long time since I have had a sake that is not often seen in Tokyo. It has a gentle pear-like aroma, a delicious rice flavor, and a crisp acidity with a slight bitterness to finish it off.
I hope to visit the breweries on Sado Island someday🐾.
Home brewing at a liquor store
Sake that had been closed for about 6 years at the liquor store.
It's hard to believe it's a raw sake 😂.
Calm. You can feel the freshness about 6 meters away.
The aroma is damp, like an old farm barn. It seems to have a nostalgia that accepts any snacks.
At an izakaya on the first day of the Niigata expedition. It is a brand that is almost never seen in Kansai, my home region. Not too sweet, not too spicy. It is a very well-balanced sake. (I have a vague recollection of the name).
