There is a slight citrus fruitiness in the aroma and attack, but after that, it is clean and crisp.
Sashimi with wasabi is a good choice. The sweetness that was supposed to be missing is summoned and it becomes an easy-drinking sake.
Maybe it is because I am tired, but I feel it is even drier than usual.

It was a bit assertive for a Hitakami, but after the mid-palate, it quickly fades away to play a supporting role and complement the food.
The Edomae Sushi illustration on the back of the label is also a fun touch!
