I think it was an authentic sake with a refreshing taste.
My memory is a little hazy, but I'm sure it was a delicious sake. I'm sure it was...

Refreshing sweetness when opened.
One sip and it is light overall, but has a good balance of sour and sweet tastes. The rest may be a matter of taste.
Personally, I think the Chiyozu Toraya morning pressing from 2 years ago or the Gobashi from 3 years ago is better. Gobashi from two years ago was delicious.
This sake is made with short-stalked Watarifune No. 2 rice, which has a long history in sake rice, and the rice polishing ratio is kept at 80%. The sake has a good sense of tanginess and astringency, as well as the unique acidity of a sake brewed using a traditional sake yeast yeast.

I was told by the liquor store that this freshly made sake grows better if you open it and let it sit for a bit 💦 Sorry for the delay in posting this.

Freshly opened, it has a gorgeous aroma, some sweetness and umami, and a strong acidity that makes it fresh! And spiciness too!
On the third day, the acidity subsides a little and the sweetness and umami become apparent!
On the 5th day, the acidity subsides and the sweetness increases and it is delicious. ❣️
This sweetness is unique, and as bouken said, it is a sweetness without the fruitiness of candy!
On the 6th day, the sweetness decreases and the flavor becomes more umami-centric.
The 5th day after opening the bottle is the sweetest and my favorite 💕.
This is a brewery that brews the sacred sake for the Shinmai Festival, which is only done at two breweries in the whole country!
The sake is brought to the store after being prayed for at the Oloron Shrine next door and labeled on the morning of the day of brewing!
Three tanks are staggered for brewing, and the best tank is filled on the day of brewing!

We received this sake at a New Year's party. We were told that it was squeezed on New Year's Day, and with the seven gods of good fortune on the label, it was a perfect sake for the New Year. It has a slightly acidic, dry, and very easy-to-drink taste, and we enjoyed it with black beans.

It's too easy to drink...and too congratulatory...it's fresh but has a proper ginjo aroma, but not too sweet and not too spicy.... It's just so easy to drink. It's just so easy to drink. And it goes well with Osechi. It's horrible! I think I've gained so much weight!
I received this sake from a junior colleague at work.
It is a special sake that is pressed, bottled, and shipped on January 1, 2023. It is very rare to have a chance to drink this kind of sake, so I am very thankful for it.
The taste is basically dry.
It has a clean mouthfeel and a juicy, umami taste that floods the mouth around the middle of the bottle. The wine has a dry aftertaste with a good amount of gas.
What can I say, it is a refreshing wine with a deep flavor.
