I went to Ibaraki Jizake Bar in Tsukuba Station to explore Ibaraki's Sake in depth.
It is easy to drink and delicious!

Sake Mother Shibori Rei" was surprisingly sweet and sour 😳I remember the Sake Mother Shibori being available at Hatsumomiji too 🤔.
Only "Junmai Ginjo Kenokawa" is made from Koshihikari rice, which for some reason is not sake rice 😁.
A bit more complex and classical overall.

Ibaraki advertises that you can drink sake from five different water systems, but I'm not so sure about that.
Sakaimachi, where Tokumasamune is located, is on the Tone River system. I'm not sure if the water is that murky and fishy, but I'm sure the subterranean water is clean.
Surprisingly (and I don't mean to be rude), it is delicious.
It has a mild aroma and is easy to drink without any miscellaneous tastes.
It is light and refreshing, but when you roll it around in your mouth, you will not get tired of drinking it because of its subtle flavor and sweetness.
This is the type of sake that I would like to have with my evening drink.

It has aromas of melon, pear, honeysuckle, and wisteria flowers. The attack is rather weak, with a moderate sweetness and a firm acidity. The aftertaste is rather short.

Tokumasamune, Junmai Nama Nama. A glass of cold sake. What an easy to drink sake with no peculiarities. It has a light, fluffy yet thick sweetness. If I say it has no personality, that's all I'm saying, but on the contrary, it's fresh and balanced enough to go with any kind of snack.

This Sake is semi dry with a light body and has a mild flavor that reminds me of pine wood. The sugar sweetness lasts through the aftertaste. This Sake is a nice surprise for a Daiginjo.
