The acidity does not play too much of a leading role, but is balanced by the sweetness, making the drink refreshing and light, just like a fruit wine. The Higashitsuru Brewery, which has been in business for more than 200 years in Taku, Saga, has been rebranding itself since the current brewer, Mr. Komatsu took over, and succeeded in obtaining soft water more suitable for sake brewing by digging a new well 100 meters down. With this water and new facilities, the quality of sake has been refined and the expression of acidity and clarity has been refined.
This junmai-shu made with wine yeast is one such challenge. By daring to use wine yeast instead of the usual sake yeast, we were able to achieve a different acidity and aroma from conventional sake. Especially this year, the koji has been finished well, giving the sake an even more translucent appearance.
This is a slightly strange, yet very pleasant sake that makes you think, "Sake can be like this. It is recommended for sake beginners.

I bought this sake after it was explained to me that I would definitely buy it if it was available. I opened the bottle in the sink, and even though it was well chilled, it poured out for a while and ran out around the neck of the 4-goupe bottle.
It says it is slightly sparkling, but it was very active. It is a rich, sweet and sour sparkling sake with white malted rice used to accentuate the flavor. It has a good balance of sweetness and sourness like white peaches and feels like a fruit wine.
When poured into a glass, it is cloudy and the amount of oli is a little high. The aroma is fresh, with hints of grapefruit, pear, and a hint of melon. When you drink it, the fresh and juicy flavor spreads freshly with a feeling of petit-petit and fine gas. Along with the gaseous sensation, you can also taste a richness, umami, and mild sweetness. The smoothness of the throat and the gentle sweetness in the aftertaste. Delicious 😋.

This is a special order item for the sake shops of Higashitsuru, a company we have been serving a lot recently. This one is made with Saga no Hana (flower of Saga) and is bottle warmed and hi-seasoned to preserve its fruity flavor. We have high expectations.
It has a melon-like sweetness, but it is not too sweet and the aroma is not too strong, so it is quite refreshing. It may be the type that is popular these days. It can be enjoyed by itself or with food.
Higashi-Tsuru is a family-owned business, and I don't think the production volume was that large. However, they have pursued the pursuit of flavor by deepening the well and are a brewery that I would like to continue to patronize in the future.

Ponchan❣️Tozuru is a sake from Saga, so they carry it in Fukuoka and it's easy to get if you travel to Saga🙆Thank goodness 🎶It may be a matter of taste, koji, rice, or water, but Kyushu Yamaguchi sake seems to suit my palate more 😍.
