Sake from the San'in region tends to give the impression of being heavy, so people tend to avoid it, but Izumo Fuji does not have an advanced mellowness that lingers in the aftertaste.
Rather, Izumo Fuji has a light finish, and while the mature flavor typical of this autumn sake can be fully felt, hats off to the technique used to bring out this crisp finish!

This is the first Izumo Fuji Akiumo I've ever had!
I guess it's a dry sake.

I went to a brewery in Izumo City and asked for a recommendation.
I thought sweet sake was too much for me, so I bought the sake they offered me.
It's pitch black and cool!
Drank it at room temperature.
Plenty of umami, with an aftertaste. Nice lingering aftertaste.
Is it sweet? Not sweet, not spicy.
Delicious! But I'd like to try it chilled.
