Suddenly, I wanted to drink Shimane sake,
I went to a supermarket and a convenience store.
The nearest Seven had it.
It's the first Yi Bai.
It's for cold sake only.
Well, well, well,
It has more flavor than I imagined,
It is delicious.
I know sweet + sweet doesn't go well together,
I also tried it with a loach bun.
Well, I guess it is just as I imagined.
The sake itself is delicious, so when I have a problem, I will buy it again.
No, no, I would like to drink other Yi Bai,
Flavor is pretty mild up front but comes on stronger. The bottle says aloe and I wouldn't have thought of it but I see it now. Finish is tart and warm, with cherry and plum. A relatively full bodied drink, I wonder if it would do well by airing for a while. Also may be better colder.
All in all a nice drink and one I'd have with food.
The second glass was a bit sweet and mild, so I finished with a dry sake.

Smoky overtones
From the mild top notes, the mouthfeel is clean and crisp. From there, the flavor and smoky overtone spread out. It is sharp and invites you to drink the next cup.
Pair it with octopus and potato salad with olives. I enjoyed the pairing of the food with the acidity and the sake with the aroma.

It is interesting to note the difference between the first sip of the wine and the sip that lingers afterwards. The first is sharp and dry. The sweetness that lingers slightly afterward.
